Hi Catlin, WOW you’re on the verge of two years. Good for you. You are an inspiration for me. I was referring to the “New Members” only. I’m 100% sure that the rules of this forum have changed since its start concerning “New Members”. Intentions are good, but they need to be supported by personal actions and when you’re inexperienced you only have the Gurus’ to help guide you. No one should be afraid or ashamed to ask for advice or help on this Forum. There are plenty of experienced people here willing to lend a helping hand.

I agree with you about judging how people really are like based only on their posts. Thank goodness for Meat Ups. I hope that I can make the San Antonio Meat UP. I sure would like to hear some voices behind the words LOL!!!

Hi Sharon (GA), to tell you the truth I am a pretty shy guy. I have done some really bold actions when the occasion arises, but other than that I’m pretty quiet especially with folks that I don’t know. You can probably tell by my posts. I just post from the heart. I may not be on a big adventure or globetrotting, but I’m high on life and what it brings to me everyday.

Hi Sharon( F), This observation is in reference to "New Members”. I don’t expect established (ZC)ers to talk about food all the time. I’m sure I read somewhere that Charles mentions that “New Members” should not give advice and should read more than they post and something to the effect that this forum is more interested in their (New Members) (ZC) Journey and any problems they are having rather than their opinion for at least the first 6 months.

8/31/2010 Daily Update

Today is another Glorious day in the Life of (ZC). No Cravings for Carbs, No Cheats and best of all No Tummy Troubles. The last one can be a (ZC) killer.

I guess I have a bit of that euphoric feeling today. It is not as high as I have experienced it in the past, but it’s all good. I really enjoy the time I spend here. I continue to learn as I read Journals and I feel very comfortable with this WOE.

Last night I was thinking about my Journey with (ZC). I was trying to reason why some people make it and why some people fail. So I have been spending time looking at Journals that have been Locked or not Active for a long time. I noticed that some New Members come racing out of the shoot with a lot of enthusiasm for this WOE (Good). They began to Journal what they eat and how it affects them. Then gradually in some of those Journals I see where some New Members get offended by some “Tough Love” and want to quit the forum or just can't deal with the change. I also notice where some New Members get totally "Off Track" by Journaling about their personal life and not much on their (ZC) experience. 

I learned a lot form those Journals. Sometimes you have to have a thick skin. This was just an observation.

Hi Nikki, to me you have to weigh the Taste vs. the Convince. IMO coal or wood tastes better. I was trying to get the best of both worlds by using a wood chip box. It actually worked well but is a little extra work. The propane grill I have does not have a built in one so I put a generic one. It is hard to place in the propane grill so that it gets hot enough to smoke. 

I’m glad you are keeping pace with your diet sodas. I used to love them to death. I think I wouldn’t skip a day without at least one (YIKES!!!) 

BTW I hope Heidi checks in. Battle On Nikki, keep rocking and rolling, or whatever you do to keep (ZC).

8/30/2010 Daily Update

Today marks ten weeks of (ZC)!!! Or should I say 2 months. NO Cravings for carbs, NO Cheats, and NO tummy troubles. 

It’s funny how we think when describing time. I know when it comes to babies most people refer to them in months instead of years. I guess until they are two or three years old. I don’t know exactly because I don’t have any. I guess it’s all relevant.
 

I ate so much yesterday I am almost ashamed to admit it.......NOT. That charcoaled grilled steak tasted sooooo gooood it was unbelievable. Not to mention the Snow Crab. OMG I was in (ZC) Heaven. I am seriously considering chunking the propane grill and opt for a combo unit or strictly a coal/wood unit. It is a little more work, but well worth the outcome. (DW) who really doesn’t care for beef much also made the comment of how good her Rib eye steak was yesterday. Or maybe I will keep the propane unit for quickies and start using the Webber for small special meals and save a little money until I have completed my outdoor Kitchen/Dining area. Then I can see what type of unit I will buy (Yada, Yada, Yada).

I want to start working on a chart that I will post on Monday s showing my progress. It will be in the form of a graph like the ones you see for the stock market. If anyone has an idea how I would post it would be of great help. I know how to post pics with my photobucket account if that helps.

8/29/2010 Daily Update

Today is the beginning of another great day. My Spirits a great, no cravings for carbs, no cheats, and no tummy troubles.

I have some yard work to do today. Yesterday I did a little and got stung by a wasp. They made two small nests in my garden shed. I opened the shed today and one flew right past my face. I got some insect killer and zapped the nests and knocked them out of my shed. 

On the brighter side: I will grill up a couple of thick Rib eyes with some of that Snow Crab that I still have. (DW) can't wait (I always shell the crab for her ). I will first go and do a little shopping. I want to find one of those old fashioned cast iron Hibachi. They are great for just one or two steaks and I can use coal or wood instead of propane. It is a world of difference in taste. I'll take some pics if I remember and post them. 

Good Steak, Good Burgers or whatever makes you HAPPY!!!!!!!!!!!!

8/28/2010

I have to change "Today's Menu." I intended to eat fatty beef brisket, but I ended up on the hunt at one of the three big chain stores and found a case load of "Manager's Specials." I bagged some boneless beef chuck ribs for 0.99 lb, four packages of Shoulder lamb chops for $2.81 lb and some Flat Iron steaks on sale for $3.99 lb. The Flat Iron steaks are almost always $5.99 lb. I also found a package of four 1/4 lb Sirloin pre-formed patties (no seasoning) that were marked down from $6.99 to only 0.99 for the entire 1 pound package. So I ended up pan frying all four of the Sirloin burgers in that tallow I made a while back and gorged myself on it (it was not pretty)lol. 

I ate around 11:00am or so and 11 hours later I am still not hungry. I bet I gain a couple of pounds tomorrow LOL!!!!!

8/28/2010 Daily Update

I got up real early this morning. I woke up to my (DW)’s alarm clock. She forgot to turn it off before she went to bed since she has this weekend off. So was I still sleeping at 5:20am………………..NOT.

Anyway we had a lazy morning in bed talking of who knows what. The content was not important, just the casual conversation (quality time). So when (DW) was ready, I made her breakfast: Hash Browns, Bacon and Eggs. I had a nice cool glass of H20. 

It was only 8:30am and only 73 degrees out so I opted to take a nice stroll at the Water Way where I discovered something new. I have always known of the walking path on the other side of the Water Way but never ventured that route. So, today instead of doubling back the same path I continued to the other side. To my delight I found a tiny hidden well maintained Koi Pound Park. It was small but beautiful. I regret that I did not take any pictures. Next time I will. The tiny setting is in front of one of those upscale condos that sits on the Water Way. Simply Beautiful. The next time (DW) comes along for the stroll I will surprise her with it.

Today was a real good day. I look forward to the weekend. I have a lot of small projects at home. I still have a butt load of fatty beef brisket on hand. I will continue to eat it until I run out. 

It has been real hot lately. A lot of my projects are outside, so I have to do them early in the day and in the evening. I am planning to make a disappearing fountain and pergola in my backyard between two small ponds. I also have a garage full of junk to shift through. I have been in my house for a couple of years and still have boxes of junk that I should have chunked before I moved. 

Another big project is an outdoor covered deck that I will use as an outdoor dinning area / kitchen. We have long periods of time that can be used for outdoor entertaining such as grilling lots of Yummy Rib eye Steaks!!!!!!!!!!

Another lovely day in the life of (ZC). My Spirits are High, no cravings for carbs, no cheats and no tummy troubles. 

I had a real good time at the Employee Award and Recognition Ceremony. It was at one those big fancy hotels. There must have been around 300 or so employees. I got my Perfect Attendance Award, three years in a row. It would have been four years in a row, but my original start date was short two days. Oh well. I did real good at the ceremony. I sat back and enjoyed a large glass of H20.

We had a lot of fun. We took photos with the big cheese and group pictures with my employees who were eligible to attend.

8/26/2010

My little experiment worked wonders today. I increased my intake of my first meal and it lasted almost the whole day. I got a little hungry around 7:00pm and ate a couple of spoons of fatty beef brisket and I had enough. I will continue down this path and see where it takes me. 

The part of the brisket that I am eating now is the lean side. I made sure to add a lot of beef tallow in it. After I heat it you can see a nice puddle of tallow. It’s so funny, that the other two supervisors always make the comments on how good my fatty beef brisket smells. I thought they would be sick of the same smell every morning. 

Tomorrow is yet another Big Test. We have a huge employee appreciation banquet in the morning. It lasts around 3 hours. It starts with a Mega breakfast buffet full of all kinds of breakfast foods and deserts. I will stick with the fatty beef brisket. So I will eat my normal routine and enjoy a glass of H20 while the others gorge themselves.

8/26/2010 Daily Update

A big Texas HOWDY to Y’ALL. My Spirits are Soaring today. No cravings for carbs, no cheats, and no tummy troubles.

I really got a lot of rest yesterday. I fell asleep a little after I got home. I woke up around 9pm stayed up for a while then fell back asleep. I feel refreshed and ready to rock and roll with today’s onslaught of on typical customer and employee complaints. Bring It On!!!!!!!

I increased the amount of fatty beef brisket today in order to stave off getting hungry right before I get off work. The day before yesterday I was able to hold off until I got home in order to eat the last of my fatty beef ribs. Yesterday I had the same end of the shift experience, but opted to stop at Jack in the Box for four beef patties and H2O. It is still not a bad deal for just over $3.00. That was my second meal of the day at around 3:25pm. I am getting hungry as I type and will heat up some Yummy fatty beef brisket accordingly lol.

Hi Jennifer, I just like to slow cook then in the oven. When I use high heat in the oven the meat is tough and is harder to get off the bone. I have found that 250 for 3 hours makes them fall off the bone tender. I have even used cooking bags in the oven for a shorter period of time.

8/25/2010 Daily Update

(ZC)ers lend me your ear!! I just wanted to say Good Morning, Good day, Good Evening or Good Night. I guess it depends on what part of the world you reside. Still no cravings for carbs, no cheats, and no tummy troubles.

It’s funny how my hunger shifts. For a good while I was taking my first meal of the day in the late morning, but recently I have been taking my first meal 2 -3 hours earlier. I just wait for the hunger to set in and eat. Luckily I’m in a position that I can eat on demand in most cases. Yesterday around quitting time I became hungry. I really wanted to go home and eat that last of the fatty beef ribs leftovers. I almost hit a Jack in the Box on the way home to grab some beef patties, but I didn’t. It takes me around 50 minutes or so to get home, so I waited and ate the ribs. I have a ton of fatty beef brisket at home so that will be my fare for a little while.

Waaassss uuuppp Barry? Ditto. I am glad that I have been able to experience each one individually and in different combinations. The experiences have taught me a lot. 

I hope your Journey on (ZC) has been as good of a learning experience as mine. I love to take the scientific approach to things: Trial and Error, Taking Notes, Making Adjustments, Analyzing Results and so on. I wish that (ZC) could be a “One Size Fits All” WOE, but sadly it’s not. I’m glad at least we have a Core Set of Principles that makes us (ZC). Battle on Barry!!!

8/24/2010 Daily Update

Another glorious day in the life of (ZC)!! My spirits are in check, no cravings for carbs, not cheats and no tummy troubles. 

I went to HEB on the way home yesterday to pick up a gallon of milk for (DW). I spotted a nice pack of extra fatty beef ribs. I bought a small package and slow cooked them in the oven at 250 for three hours. When they were done I let them sit to cool off a bit. I was able to grab the bone and pull them right out with little to no effort. So it looks like fatty beef ribs will be my first meal of the day.

8/23/2010 Daily Update

I had a nice weekend. My spirits are good, no cravings for carbs, no cheats, and no tummy troubles. 

Today marks 9 weeks of (ZC).
 

I learned a lot this weekend. I learned that I need to stay on fatty beef in order to lose weight. When I stray, I either stall or gain. I also have learned that if I eat other than actually feeling my tummy rumble, I stall or gain. Lastly I learned that if I eat just before sleeping, I stall or gain. I did all those things this week end and saw all of those results. No Worries. This is all a learning experience for me. Stalling or gaining does not put a chink in my armor. My resolve is stronger than ever before. All I have to do is continue with the fatty beef and water and watch the pounds slip away. This is the way my body works. I can only speak for myself. I make quick adjustments and analyze the results. I noticed that weekends are my biggest challenge. I don’t have set schedule unless I am going to an event.
 

I have eaten all (ZC) for the past 9 weeks. It has been interesting to evaluate how my body reacts to certain (ZC) foods. Once I’m at where I need to be concerning weight, I can see that maintaining it will be for the most part easy. For me, Discipline is the key.

Sunday I bagged a nice size fatty beef brisket. I slow cooked the brisket and now have a large container of goodness. I still need to ground up the last of my brown bits and sprinkle them in like nuts on a Ice Cream Sunday (lol). I also grilled up some Chuck Steaks that I found deep in the freezer. After I grilled the steaks I flash freeze them and stored them for future use.

I had a jammed packed weekend. It was full of activity in and out of the house. Had a great time with Mum. We ate a late breakfast at the Woodlands Resort and Conference Center on Saturday. I had an omelet made with cheddar, bacon and ham. I also had bacon, sausage on the side. It was all good. It was a big change from fatty beef brisket. We then spent the rest of the day shopping.

Today I had several tasks to perform around the house. The main event was taping off the guest bathroom and then painting it. It came out really nice.

Now the MAIN, MAIN event was of course steaming the Snow Crab and grilling the Rib eye. Now the MAIN EVENT times THREE was eating it all up……………YES, I was in HOG HEAVEN!!!!!!!!!!!!!!!

Thank you Jennifer, I’m glad that my posts can bring a little grin or Joy to someone. As far as the phrases or taglines, well the way I come up with them depends on the mood of the post. I wish I had a cache of them. Sometimes they come easy and sometimes I have to ponder the right words. I have three basic tags: (ZC), (ZC)ing, and (ZC)ers. Sometimes a post or a reply to a post deserves a “quote”. About 99% of the quotes are via the internet. Even at that I feel that I must find one that fits the mood of the post. I take a lot of time and consideration when I tag or quote. I have found myself changing tags or quotes before finally posting (thank God for preview post). I make an honest effort to not tag or quote the same phrase more than once. It can be a test sometimes. Also when I quote I give full reference to the author of the quote. If you see –Dave- next to a quote, it was original to me as far as I know. The tags are bits and pieces of old sayings, songs, a blast form the past or just the tone of the post.

Thanks Caitlin, it feels good to break past the 240's. Although I have set a mini goal, in my mind every time I break through a 10 pound increment (60s,50s, 40s and so on) it is a Victory. I feel like it's one more obstacle out of the way towards my Ultimate Goal.

8/20/2010 Daily Update

This week went by fast. I’m glad the weekend is around the corner. My spirits are good, no cravings for carbs, no cheats, and no tummy troubles.

Today is my last day of the fatty beef brisket supply. So far so good, I will take a break this weekend from the brisket. I have some Rib eyes in the fridge begging to be eaten along with some Snow Crab. That will be my Sunday meal. As for tomorrow, I don’t know as of yet. (DW) works this weekend, so I plan to pick up MUM. I will probably take her out to the Water Way for a late breakfast or an early lunch. 

I definitely will be purchasing another fatty beef brisket and continue with this trek. I will cook it on Sunday for the rest of the week. I almost considered switching over to leg quarters. The ones I see in the store are full of fat. They also average 0.69 lb or less. I was thinking of just baking them and then debone them. I would then chop up all the meat and add all the drippings and maybe some tallow. I don’t know, just a thought. 

Although I in the 230’s, I don’t feel secure in that range yet. The way I bounce on the scale sometimes. I will feel better after I have achieved my mini goal. The next mini goal after that will be 219. If I remember correctly, my all time lowest on LC was 220. So, 219 would break that. I am getting too way ahead of myself.

8/19/2010 Daily Update

Good Day ALL, I had a nice surprise at the scale this morning. No cravings for carbs, not cheats, and no tummy troubles. Oh Yeah!!!!

WOW, What a Wacky Way to lose Weight. Can you say that three times while holding your tongue? What? I can actually see people cringe when I try to explain the (ZC) concept. You gotta love it. It comes to a point where I wish some people would stop asking me “how did you lose all that weight?” If it wasn’t for the fact that I might actually reach someone I would probably not even bother explain the (ZC) WOE.

I did not get this much scrutiny when I used to explain LC and VLC to others as a way to lose weight.

8/18/2010 Daily Update

I had a real good sense of being today. Especially in the morning. I had this feeling of euphoria . I could actually sense the tingle through out my body. What a great way to start the day. No cravings for carbs, no cheats and no tummy troubles. My spirits are at an all time high.

Today was an extremely busy day for me.. I had three training classes to attend for upgraded software on our systems. When I came back to office, we had wall to wall customers. After I arrived home (DW) told me that her car would not start. After I got a cable boost I took it to a mechanic shop so they could check the battery and alternator. They wanted to charge $24.99 +tax. After waiting an hour I decided to head down to an auto parts store. Most of them can check your battery and alternator. You just pop the hood and they hook up a small machine and it reads the results. Best of all it is free and the replacement battery was about $15.00 cheaper than the mechanic shop. They even lent me the tools to take out my battery.

Karen, I liked your Rib eye Steak Adventure story. BTW feel free to Thread-Jack anytime. 

Portions have been a concern for me. Sometimes I weigh my food. I am trying to see if there is a difference if I eat 8 oz of fatty beef brisket or 6oz. if I feel satisfied with the smaller amount then that’s ok. Another aspect I need to observe is if I will get hungry faster because of the smaller amount. For me it’s important. I rather, for instance, eat 2 more ounces of meat and not have to eat another meal for the day. On the other hand, if I am satisfied with the two ounces less why eat more than I require. I understand everyday is different; I am just trying to find a balance. When my weight is where it should be. I would probably look at this with different eyes. If nothing else, it keeps me interested an excited about this WOE.

It is easy for me to overeat. It’s not hard to get into an eating frenzy if I like the taste of the meat I am eating especially when it is greasy ribs . Sometimes I have to tell myself enough is enough and just stop. LOL

This evening I felt a little hungry. So I decided to take some of those fat crispy brown bits and heat them in a pan. I let them fry in their own oil. I just placed them in a bowl and ate them. It was not a whole bunch, but it was real filling. The marks my first full fat snack. It was too small to call a meal. It was crispy and tasty. I still have some left for another time.

8/17/2010 Daily Update

Good day all. I stayed up a little late last night, but I still managed to get some rest. My spirits are pie in the sky!! No cravings for carbs, no cheats and no tummy troubles. 

We have been overwhelmed at work. I am real short staffed due to illnesses, vacations and a hiring freeze. Yesterday was real stressful. Some of my employees do not use common sense when dealing with difficult customers. I have to intercede a lot. 

Even after eight weeks of (ZC) I still find it hard sometimes to separate food as fuel and food as entertainment. Old habits are hard to break especially when you are The Lone Ranger at home. No excuses, just an observation. It would be real neat to have at least one family member or close friend to join me on this Journey in my own backyard.

I hope everyone has a Great (ZC) Day!!!!

Hi, Karen, I used to like just a small serving when I ordered a mixed BBQ plate at a restaurant. Of course that meat is smoked in the pit and has a completely different taste. Even at that I could only eat a small portion maybe a few times a year.

I had a conversation with one of my sisters this evening. She asked how I was doing with this WOE. I told her that I lost almost 20 pounds in 8 weeks. She try to give me some advice like trying to fool my body to pick up my metabolism. She said I should eat a small amount of meat even when I am not hungry. I told her that WE practice “Eat when hungry” and Drink when Thirsty”. Bless her heart, I know she is trying to help. I guess she is so caught up on certain health trends, that she doesn’t see the light about this WOE. I turned her on to low carb a while back and she agrees with the principle. She just doesn’t seem able to take the next step to (ZC). She told me that see is trying a new Atkins diet as of today. At least that’s better than SAD.

I gotta tell ya that I really enjoyed the fatty beef brisket. It must be those crispy brown bits. Some of them still had a crunch to them YUM. Normally I eat a little brisket and I will grow tired of the flavor quickly. So far so good with this one.

Battle On Heidi, thanks. I can’t believe it has been eight weeks. Time has passed quickly and I’m as excited about this WOE as day one. I just keep plugging away day by day. I refuse to fail. I will do what it takes to get there. 

Some of the things I promised myself when I started this Journey: No Excuses, No Surrender, No Retreat and No Pity Parties. Just Honest Hard Effort. At the end of the day if I don’t keep these promises, I will be only fooling Myself.

We all can be defenders of this WOE.

Hi Lise, thanks for your comments. I am constantly trying to figure out what works for me. I have a lot of weight to lose and the last thing I want to do is stall for extended periods of time. If I can find what exactly works for me I will stick to it. I have high hopes for fatty beef. I need to increase the fat content. I seem to react better to fattier beef so far. I just got to get myself used to a higher content of fat. I get nauseous with real high fat content, but I am slowly getting used to it and will increase the fat as I can tolerate it.

8/16/2010 Daily Update

Today marks 8 weeks of (ZC). My Spirits are Soaring. No cravings for carbs, no cheats, no tummy troubles.

The transition to (ZC) has been relatively easy for me. Just like anyone else that wants to lose weight, we wish it was all gone yesterday. Sure the bouncing scale can be disappointing, but what the heck. It does not get me down. I have pondered a few times of doing a weekly weigh-in. I just want to make sure what I’m eating is working for me and daily weigh-ins help me calculate that.

I have seen a small trend of losing more weight when I eat fatty beef. This week I will be eating fatty beef brisket. If I run out before Monday I will make another one. I will see then if this trend continues or if it was just a coincidence.

Good Lord another great weekend just about gone. This was somewhat of a working weekend. I did have some time to play, but I did have some work around the house and yard. Just about an hour ago I had to fix my electric range top. One of the large elements went out. I made it just in enough time to Home Depot to buy the stuff to repair it. (DW) lent a bid hand. 

I had only one meal of the fatty beef brisket. I guess it sticks to my ribs. It actually tastes much better than my last one. It must be those brown bits. I am very optimistic about the coming week. Now that I am armed and ready
 with some fatty beef brisket, I am ready to take on the world. Right? LOL!!!!!!!!! 

I hope my last fatty beef brisket trial was not a big fluke. I will monitor and assess accordingly.

8/15/2010 Daily Update

I had another good night of rest. My spirits are good, no cravings for carbs, no cheats, and no tummy troubles. 

I ended up putting 2/3s of the crispy fat in the food processor and ground them up. I then mixed them up with the chopped fatty beef brisket. I had some this morning and it was good.

Not much going on today except a little yard work.

8/14/2010 Daily Update

I got some good rest last night. No cravings, no cheats, and no tummy troubles. I tried to get up and out as soon as I woke up. It gets hot early and I wanted to get a little fresh air before the heat took over. My first couple of post today were via BlackBerry. 

So far today has been pretty good. I took a nice stroll by the water way. As I was walking an older gentlemen around late 60ish passed me by at a good pace. He was sweating profusely, breathing hard, his gait was irregular and his feet had a slight drag. It was a little hot. I felt ok at my pace, but I felt sorry for the guy that passed me by. I'm sure he thought he was doing himself a favor, but it looked like torture to me.

After my stroll and some lounging at a street cafĂ© drinking some water, I did some shopping at Target and Wal-mart. I then went home and put a beef brisket in the oven. I forgot to do it last night before I went to sleep. The whole house smells like beef. I’m thinking of taking all those brown bits I had left from the rendered fat and putting them in the food processor to break up into small pieces and mix them up with the soon to be chopped fatty beef brisket. It might give it a better taste and will increase the fat content of the beef.

Well I was out and about and all of a sudden I became hungry. I was on my way to Wal-mart and did not want to repeat my last McD adventure I was on the back side of The Woodlands and knew that the JB was on the opposite side. So I ventured past my original destination and low and behold I found a JB. I felt a little strange ordering just the meat, but I bravly said "I will have four large beef patties and a cup for water." The guy said "3.19." And I was pleased as punch. He didn't even ask if wanted fries. The beef paties were great. They came in a nice little bowl with a lid. I grabbed a fork and chowed down. I am totally sold on Jack in the Box..

Hi Karen, I also get good meat deals at Kroger’s and Randall’s. All three of the big chain stores almost mirror each other most weeks. There just happens to be an HEB a couple of exits before Woodlands Parkway right on the feeder. So once I shop there I can take a side road right into The Woodlands. HEB and Randall’s usually have the Rib eyes on special and Kroger’s has the T-bone and NY strip on special.

Today was another great day in the Life of (ZC). I learned some new things, I was given some good advice and I had fun learning. I want to thank everyone that has come by and made encouraging comments, gave pointers and tips.

I plan on relaxing this weekend. I need a big FAT lazy day.

Good day all, I stayed up too late last night. I did not get enough rest. Nevertheless my spirits are high, no carvings for carbs, no cheats, and no tummy troubles. 

I’m kind of excited and unsure exactly what to do with my new source of fat. I’m kicking around the idea of using all the “crispy” fat mixed in with a new batch of fatty brisket that I will start to slow cook when I get home this evening. This will make an extra fatty beef brisket that should last quit a bit. As far as the tallow, I guess I will keep it in reserve for now. I’m not sure how long it lasts without going rancid. I have it in a plastic container in the fridge. 

Well my weekend guest gave me a last minute “no show” notice. So since (DW) will be off, I guess we will have a nice kick back relaxing weekend.

Hey Mel, funny you should mention that. I searched the forum yesterday and I couldn’t find information about rendering the fat using a conventional oven and what temperature to use. My first instinct was to place the fat in the oven at 250 and let it slow cook until it looked right. So that’s what I did. After about 30 minutes of surfing the internet for more insight I came upon a YouTube video on “how to render beef fat.” The guy on the video used an oven and set it at 350. So I went to the oven and changed it. I don’t remember any bad taste and this morning it looked solid white.

Did I goof? This is all new to me. I have never made pemmican. I do want to try it one day, but I still need more time to figure out exactly how I want to approach it. I think I will use the oil in the same manner as you, to supplement the fat in my steaks for now. I might make a mini experiment on pemmican later on with some of the tallow.

Most of the time we have really good sales. Like today at HEB I found bone-in Rib eyes for $3.77lb. The same Rib eyes would cost near or over $10.00 lb off sale. Almost every week Rib eyes, NY strip or some kind of steak is on sale.

I am happy to say I bagged over 7 pounds of fat trimmings for a little over three bucks. I also decided to buy a beef brisket. The brisket was also over 7 pounds for $1.48 a pound. 

I decided to render the fat in my oven. I set the oven to 350. At an hour and a half I drained about 1 an a half quarts, I then cooked it for another 45 minutes and got another ½ quart. The fat was getting a little brown so I decided not to put it back in.

This was my final result

The tallow was a golden yellow. It almost looked like apple juice. The crispy fat was brown. I guess I can mix it with ground or chopped meat.


I actually finished just as (DW) stepped into the house. As I guessed she almost fainted at the thought that I would consume any of this. My blood screen test this December will hopefully show some good results or I will never hear the end of it. She means well, but I’m preacher to the choir. 

I am going to put my faith of (ZC) to the test and eat my tallow and crispy fat. In the past (even on VLC) I never would have entertained eating tallow.

I just got off the phone with HEB and asked if I could purchase some beef fat trimmings. They said "Yes." for 0.59 lb. I aked how much can I get and the reply was about 5 lbs by the time I get there at 4:00PM. I think 0.59lb is a little much, but what the heck. I might just break down and get the beef brisket and combine it with the extra fat or GB or Ground Chuck. I would love to make pemmican but I'm not up to that challenge just yet.

I know I'm going to send my wife to Cardiac Arrest when she sees the fat. I'm going to try to cook it before she gets home from work(Pray for me).

Hi Clair, I’m not surprised to hear that you can taste the salt in the meat, but the sweet amazed me. 

When I eat out I forget to instruct the server that I want my meat unseasoned. I do not hesitate to send food back if it’s not to my order. When one of my friends comes to visit, we usually end up at Backer Street Pub (aka Sherlock’s). They serve a nice 14 oz Rib eye. I have had to send the steak back three times in the past, because I ordered it medium and I get it well done. It never tastes salty to me so far. I guess all of our senses are enhanced when not blocked by chemicals ingested by non-(ZC) foods.

8/11/2010

I am glad to start another day in the life of (ZC). No cravings for carbs, no cheats, and no tummy troubles.

I am almost out of fatty beef ribs. I feel that I did not give them a good chance to prove to me that this source of fatty beef will enhance my weight loss like the fatty beef brisket, because of my upside down week. I will be going to HEB today to buy more fatty beef. I’m almost convinced to buy another brisket. I really like the taste of the ribs better although they are a little harder to cut up and yield less meat per $$. I have even considered buying the 73/27 GB (Yuk). 

I did not end up doing any yard work yesterday. I was so tired when I got home I just crashed and burned. I feel a little sore from over doing it the other day.

Good day all!! I am back in action. I wasn’t surprised at this mornings weigh-in. I had a small increase. I’m sure it will go down before the end of the week. My spirits are high, no cravings for carbs, no cheats, and no tummy troubles.

I worked my fanny off after jury duty to complete exhaustion. I haven’t been that tired since spring training when I used to play high school football. I’m sure I spike my insulin levels. I will have to work on the yard today again. This time I will not push myself to that extreme. I will wait until 6:00pm or so. It is really hot right now. I did not drink enough water yesterday. I am usually real good about keeping hydrated when working in hot weather. I just got caught up in the yard work and tried to do as much as I could. I have some guest coming over on the weekend and I want to make my yard look extra nice.

I am so glad to get back on a regular consumption of fatty beef. It looks like the 230s are giving me a run for my money, But that’s ok. I ready to Lock and Load and Rock and Roll!!

I am still amazed how sweet it is too. I really enjoy the taste of spring water. I had posted that I took a sip of my sisters wine and I could taste the sweet in it. A couple of months ago I would have said it was too dry for me. I always leaned towards the semi-sweet to sweet wines. I can't imagine how those wines would taste to me now.
