Good day all, I stayed up too late last night. I did not get enough rest. Nevertheless my spirits are high, no carvings for carbs, no cheats, and no tummy troubles.
I’m kind of excited and unsure exactly what to do with my new source of fat. I’m kicking around the idea of using all the “crispy” fat mixed in with a new batch of fatty brisket that I will start to slow cook when I get home this evening. This will make an extra fatty beef brisket that should last quit a bit. As far as the tallow, I guess I will keep it in reserve for now. I’m not sure how long it lasts without going rancid. I have it in a plastic container in the fridge.
Well my weekend guest gave me a last minute “no show” notice. So since (DW) will be off, I guess we will have a nice kick back relaxing weekend.
